Established in 2005, Kilchoman (pronounced Kilhoman) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years. Kilchoman gives everyone the chance to see what is best about the grass-roots traditions of malt distilling.
Kilchoman is one of the smallest distilleries in Scotland (with an annual production of approximately 120,000 litres of alcohol) and one of only six distilleries to carry out traditional floor maltings, but the key difference at Kilchoman is that the barley is grown here on the farm, whereas other distilleries purchase barley from around the country.
Anthony Wills, the founder and managing director of the Kilchoman Distillery Co Ltd came up with the idea of building the ultimate farm distillery – ‘taking whisky back to its roots’. Islay was chosen as the location for the distillery because of it’s reputation worldwide for producing top quality malts, and also because Anthony knew the island well having married into a family that had owned an estate on the Island for 60 years.
The Machir Bay range is Kilchoman’s core expression, first launched in 2012 when it won the prestigious IWSC 2012 Gold Award – Best in Class. Bottled once a year, each release contains more mature casks allowing Kilchoman fans to follow the development of the unique Kilchoman malt as it matures. Matured in a combination of both bourbon and sherry casks, Machir Bay has a well-balanced combination of rich tropical fruit, peat smoke, light vanilla and intense sweetness.
Named after an inlet North West of the distillery, Sanaig has a predominantly sherry cask influence, having matured in Oloroso sherry Hogsheads. These aged Oloroso casks contribute a wonderful depth of colour and fantastic character of toffee, peat smoke and citrus with lingering sweetness.
The 100% Islay range is the world’s only single farm scotch whisky. Every stage in the creation of this peaty scotch whisky is completed here at Kilchoman’s Islay farm distillery. From growing the barley to bottling the whisky it is 100% Islay.
Named after a famously dark and peaty loch overlooked by the distillery, Loch Gorm is sherry cask single malt matured exclusively in oloroso casks, extracting the rich spicy character of the European oak as it ages in our Islay warehouses.
Combining blackberries macerated with malt whisky, honey and peaty Kilchoman new spirit, the Bramble Liqueur is not your typical whisky liqueur, the addition of the smoky Kilchoman new spirit gives it a unique character. The result is a remarkable combination of peat smoke , sweet honey and juicy blackberries.
